Cooling Food
Sometimes you want to cool food that you have just cooked so you can refrigerate it or use it in a salad. You might want to cool things like pasta, hard-boiled eggs, plain rice or boiled potatoes. Once you have drained off any hot water, tip what you want to cool into a pan or bowl and fill it with cold water. Leave it for 5 minutes with a bit of a stir half way through and then drain off the water by tipping it into a sieve or colander. Repeat if the food is still hot. You could add ice-cubes to speed things up. Do not do this with food you have flavoured in any way as you will wash all the flavour away.
If you have a liquid that you want to cool, then put it in a bowl and then put the bottom of bowl in another bowl or a sink full of cold water, ideally with ice-cubes. Do not let the cold water get in your food or it will ruin it. Try and make sure the water level is close to the level of the food or just below. If the water does not cover enough of the bowl then if will not cool it. This take a bit longer than the method above. Maybe 30 minutes or longer.
